Cooking meals with LITTLE TO NO MEAT for a family, need your ideas!
Ok so our grocery budget has been cut in half, and prices keep going up.

I need ideas and recipes for making meat stretch for a family.

We already do soups, stews and chili. Great budget meals!

I've recently added fried rice to the meal rotation, fantastic way to make a lot of food with very little. Plus my kids love it.

You can also stretch a 1lb package of Italian sausage into several meals: take half and mix into pasta sauce for spaghetti, freeze the other half to use for homemade pizza.


Any other ideas from you good folks would be sincerely appreciated!

We cook a chuck roast in the crockpot with some peppers and marinara, use Italian herbs.

Then we spoon it out over mashed potatoes.

Only two of us, this meal last all week.

Pretty cheap and satisfying, you could always spread it thinner and fill on the potatoes.

You may want to cut back on other things before cutting back on meat. Especially for growing kids. Vegans and vegetarians have to take a lot of supplements to keep them going. Even then they can get sick from no animal protein. And too many carbs for adults or inactive children is not a good thing.

Put meat first in your budget. Everything else gets cut back. Get rid of tv. Anything extra. Without your health nothing matters.

Casseroles with noodles can stretch out cut up chicken, lasagna, mac and cheese, frittatas with scrambled eggs, potatoes cheese and veggies, “ breakfast for dinner” with pancakes and eggs, huevos rancheros, cheese quesadillas

Grilled cheese sandwiches melt butter in the skillet before you put the bread in the skillet.

Catch some fish fillet them and fry them.
You can catch a lot of bream on little bait pretty quickly.

Fried Potatoes are good and cheap.

Pasta, you can make some great, filling dishes with pasta, ground beef, tuna, or just tomatoes, or bacon goes along way.

Shepherd pie, goes a long way,
it's minced beef cooked with onions in a gravy. Put some frozen peas in a dish, pour the ground beef over then mash potatoes over the top with a some grated cheese.


I make my own bread, I also make small pastry pasties with left overs.

Lentil soup in tomatoe puree, with home made bread.

Boiled eggs in a white sauce can be put with pasta or rice or salad.

1/4 teaspoon black pepper (coarsely ground)
1 teaspoon salt
1/4 cup bulgur wheat
1/2 red onion (finely diced)
5 ounces parsley (I prefer flat-leaf, but curly works too)
2 cucumbers (Lebanese, about 5 ounces, cubed)
2 tomatoes (ripe, about 8 ounces, cubed)

It's really tasty in a fresh pita pocket too.

When I shop at the store I start at the meat counter and plan the rest of the meal accordingly (sales).

MEXICAN CASSEROLE

1 15 oz can whole kernel corn, drained
1 15 oz can black beans, rinsed and drained
1 cup sour cream
1 cup picante sauce or salsa
2 cups shredded cheddar or colby jack.
1 10 oz can rotel tomatoes and green chilies
2 cups cooked rice**
1 lb ground beef browned, drained, and mixed with your favorite taco seasoning
1/4 tsp black pepper
1 cup shredded cheese for topping

**Cook rice in instant pot - combine 1 can chicken broth, 1 cup rice, and the rotel tomatoes. Use the rice setting. Use natural release for 5 minutes, then quick release, or combine the 3 ingredients and simmer for 20-25 minutes. This rice makes an excellent side dish for other meats, too.

Mix cooked rice and all other ingredients together except the cheese for topping. Spoon into a lightly greased 9 x 13 baking dish. Sprinkle cheese on top. Bake at 350 degrees for about 50 minutes.

Absolutely delicious and is a family favorite.

You can make it for decades on just sweet potatoes, eggs, and spring water.

Pastas, pintos and cornbread, mac-n-cheese, potatoes.

I concur with a few others.
I buy the meat first then plan my meals around it.
One week may be a lot of ground beef because of price so recipes that week take advantage of type of meat.
The next week may be roast beef, fish etc

We were poor. 3 kids, single mom. She made spaghetti at least once a week. That was a large meal and we had leftovers for lunch next day.
We always had a little meat, a veggie and a starch like potatoes. Mom cooked most things from scratch because it went further and cost less.
We didn't eat caned foods very often. She kind of learned how much each of us are and distributed it accordingly and she always ate last. Even when I would try to give ger some of mine, she would say she was full but I wondered.
Fir snacks she would make cookies or buy a bag of candy and distribute it evenly. Everything was measured. Got to be that I could shop and measure so she had some help. You have to sit down with a paper and pen and measure.
