We rarely eat beef and substitute it with turkey for Lasagna, meat loaf, Chili, meat patties, etc..


Ratatouille is delicious made with 1 Eggplant, 3-4 zucchini, 1 onion, tomato sauce with pepper jack cheese. It's a French dish. [link to cookieandkate.com (secure)]

Another favorite is Mac and cheese with a can of tuna fish and frozen peas.

Lintels and black beans in chicken broth with a hand full of coconut is tasty.

Easy Bake Zita / Lazy Lasagna

Preheat 375°

10 oz flat noodle pasta or 2/3 of a box into boiling salted water and stir

Sauce in big pan
2T olive oil
1/2 chopped onion cook 2 min
1 clove garlic crushed
1 lb ground sirloin or turkey
2 1/2 /c sauce (24 oz) Mario Battle’s
1/4 c water in jar

Cook for 10 min

Cheese
Parmesan
1 c ricotta
6 oz part skim mozzarella
Shred mozzarella

Add I c ricotta cheese into noodles first
4q casserole dish

Layer

1/2 c sauce on bottom
1/3 pasta with ricotta
1/3 sauce
1/3 mozzarella
2t parmesan

Do 2 more times

Bake 375° for 20 minutes

Mung Bean Stew with Kale
Let beans soak for 24 hours

Ingredients. 3 tablespoons olive oil. 1/4 cup onions chopped. 3 garlic cloves minced. 1 cup mung beans optional dry split peas. 7 cups water. 2 cups kale chopped. 1 teaspoon ground turmeric. 1 teaspoon ground cumin.

2 cups kale chopped

1 teaspoon ground cumin
1 tablespoon coriander toasted and grind
salt and pepper

Instructions
In a large pot, heat the olive oil and add the onions. Cook for 3 minutes. Add the garlic and cook for another minute. Add the mung beans, spices, salt and pepper, stir well to combine. Add water, cover and cook until the beans are tender, approximately 35 to 40 minutes. Check the beans after 20 minutes to make sure they have enough water. When the beans are ready, taste and adjust salt and liquid if needed. Add the kale and cook for 5 minutes more. Serve with bread.
