Polyphonia, polyrhythm

The former is for tonal sounds (notes/scales) the latter is about cross-rhythms, original to Africa.

There is also a subset of jazz music, Ornette Coleman for example, which is considered "atonal", but it's not really what the word seems to suggest: it's more about clashing, discordant layers of notes which don't "sound right" to the ear. Maybe not what you're looking for, OP, but worth mentioning within the context of your original post)
