I've done tea cakes and chocolate crinkles so far. We have a family cookie exchange going on since we can't all be together and I am hoping to send some nice variety to the college kids. I also have some kids to make happy; making up for the upside world that they got tossed into. A H.S. I smell it tho, and those reeces cookies had a bit of maple too. Basic dough is half cup butter, brown and golden cane mix 3/4 cup, maple syrup (I use at least 2 TBSP), 1/2 tsp of vanilla, half tsp baking powder, half tsp. salt, and I add flour until the dough is just barely not sticky. I usually put ginger powder and allspice (tsp each), but you can do cinnamon and nutmeg too. I do silver dollar sized cookies, quarter inch thick, and I put a maple brown sugar mixture on top, you can add quick oats or more ginger or cinnamon to that too. I use about 2/3 brown sugar and 1/3 maple syrup, and then I coat the top of the cookie with that. OR I put a layer of golden cane sugar on top of the cookie. I like to do just the vanilla sometimes (adding more) and make them into "vanilla spice sugar cookies". |

Haven't made them in about 10 years at least. I always bake like a mad woman around Christmas. I like to give them as gifts. And eat a bunch too! Being polish I make these every year, very simple but oh so good. [link to polishhousewife.com (secure)] I fold mine up to look like little pierogies. |
