Good morning everyone. Yes, morning for me, I just woke up.

Having a beer and watching Two and a Half Men for amusement after sleeping with YouTube videos about Star Trek and Stargate playing all night.

I wonder if falling asleep with the TV on affects your dreams? FYI - I put it on YouTube so I have no commercials 'programming me' in my sleep.

Mr went to our daughters for dinner. I stayed home as I just wasn't up to going.

I got out of my mind fucked up on RSO and even napped for a bit.

I've got a T bone in the oven on low. I have a butternut squash I'll probably throw in, too.

Cream of Mushroom Soup

(1) bunch spring onions, cleaned, split lengthwise and finely chopped

(1) 8 oz package sliced mushrooms, diced rather finely

(4) TBSP butter

(4) cups water + veggie bouillon cube or 2 cups veggie broth + 2 cups tap water

(1) 8oz package cream cheese

(1) cup whole or 2 percent milk

(3) TBSP all-purpose flour


In soup pan, melt butter. Add onions and mushrooms and cook until onions are tender and mushrooms have softened. Add flour to make a bit of roux in pan. Add stock/water and bring to simmer. Add cream cheese. Allow to melt and incorporate, then add the cup of milk. Cook on 'low' for 4+ hours. Season as desired with salt and pepper.

Other guy (not mine) ordered Smithfield ham (thinking it was like Canadian bacon). I tried to warn him, lol, but he didn't listen...this guy was sort of like a Goodfella and the look on his face when he tasted it was like something out of one of those mob movies, and so were his comments. It was all I could do to keep a straight face!

No photo because I already got into it, lol...found the rest of a Junior's Cheesecake in the freezer I bought last summer at Wal-Mart Grocery, of all places...if you like NY style cheesecake, it's the original! Hubs and I used to go there before the daughter came along, and then in her teen years a few times we put her in the matinee of a show and lingered over a few slices on the patio of their restaurant in the theatre district.

Been thinking of you, Para...sending good vibes.

Perfected the spinach, blue berry and feta salad, with only one twist left to try. This one a few hours ago was:
spinach (hand ripped not cut)
8 frozen blueberries/frozen raspberry chunks (per bowl)
a chunk of feta suitable to your whim of cheese ( I like crumbled enough to cover the greens).
thinly sliced of red onion
almond slices (not honeyed, I tried both)
Dressing
I use the smallest cup on the magic blender
1/2 virgin oilve oil
1/2 balsemic
splash of toasted sesame oil (it enhances the nuts)
splash of 'jam on hand'
a large strawberry
around 10 blueberries (all the fruits are frozen)
2 raspberries
The reason I use frozen is it makes a chilled dressing and it seems thicker then when you use fresh berries.
Perfect.
Now the only tweak I am thinking about is using candied or toasted pecans instead of almonds. I like them better.
The semi frozen berries you scatter on top add a delicious little pop/flavour burst. The 'slurry' of a dressing adds a unique substance to the salad.
Perfecto (I think the splash of sesame would add to pecans, in whatever form, just as well)
I also think that frozen is better because it is hard to smash up raspberries when fresh!.

I made cola chicken to take to my son's tonight. I put it in the crock pot on low before I went to bed. Mr turned it down a bit ago. It started to get dark. Hopefully, I didn't burn it. I'm just going to make rice to go with.

Oh, and Lance..amazing salad! My vote is for roasted, salted pecans. I'm finding the honeyed almonds to be a bit much and find I prefer the salty crunch.

Everyone's meals look wonderful.

Thank you all for your prayers.

I just returned home from filing a motion in the US District Court and sending it certified mail to the respective attorneys for the bank and mortgage processor.

I'll need to write a letter to them as well later today or tonight.

This really takes a toll on one's peace of mind and stress level.

I'm way behind on this thread, as always.

Mr liked the chocolate cake I made & wanted me to make another. He jokingly asked if I could put frosting on it like them Hostess cupcakes.

I thought he meant the white loops but he wanted the chocolate frosting that was on them.
So I made a thin icing & spooned it on, rather than going through the whole riggamarro of putting it in a baggies & snipping the tip of the baggie to make it look professional.

After all, this was just a 5 or 6 inch cake made in a Corelle soup bowl, then turned onto a small Corelle plate.
(we had to get rid of all our pretty dishes, cake pans, EVERYthing when we had the water mess in our old house and have only bought these Corelle dishes & this 'silver'ware).

The cake is REALLY good though & it doesn NOT need frosting.
Here's the recipe if you guys want it. A nice cake for 2.



1/4 C flour
1/4 C sugar
2 T cocoa
1/8 t baking soda
1/8 t salt

3 T milk (or water)

1 T water
1/4 t vanilla


Mix the dry stuff together in your big mug or microwave bowl. Stir in the wet stuff.

Nuke 1 minute and 45 seconds or til done.
