I made a soup today with potatoes, mushrooms and pea protein powder. Here’s the recipe:
1 russet potato, peeled 1 cup mushrooms, chopped 1/2 a white onion, chopped 1 tspn of coconut oil 1/4 cup half and half-optional, and should be omitted going forward into spring but today it tasted good 1 scoop pea protein isolate powder Salt and pepper to taste
Put all ingredients in a pan and cover with water. Simmer for 1 hour and blend. Serve with a can of Red Bull.
This is a complete meal and makes an amazing lunch.
