We didn't get back in town until almost 7. My son came over to watch a Clint Eastwood movie with us. We decided our parenting would be lacking if he didn't see the classics. cool2

So tonight it was frozen pizza with The Outlaw Josey Wales. I tried a new pizza with a ton of cheese. I love cheese, but after I ate 2 pieces, I'd had enough. It was filling!

We've decided on chicken fried steak for dinner. It's not my favorite, but it's good and he LOVES it, so I'm taking one for the team. :) Everything he cooks is amazing anyway so I'll enjoy it for sure.

My day was...meh? Lol. It was an adventure. I had a dentist visit that went mortifyingly awful! My gag reflex is real and I stupidly ate right before my appointment. I won't go into much detail as this is a food thread, but it didn't end well. Went much further than just gagging unfortunately. So embarrassing. :\

After the dentist I had to take my aunt for her first dose of the guinea pig vaccine. I mean, covid vaccine. She did well. Said her arm hurt during the 15 minute 'wait period' but otherwise okay at the time.

Now I am enjoying an adult beverage while my hunny is prepping a delicious dinner. :)

Mrs. won't eat it or most anything I cook, she says it is weird alien food to her.

I mean come one... potatoes soup with ham or a hamburger?

She takes every opportunity to attack and put me down.

Sadly I often pray she never returns home when she visits her retired friends at the river.

I know it's wrong, however I deserve a peaceful and appreciated life and I hate posting how my life is when everyone else at least has some respect at home.

I hope everyone is doing well and having a happy Friday! Nef typed up his biscuit recipe so that we can add it to our recipe book and I thought we should share it here too, in case anyone is looking for a new amazing biscuit recipe to try. :)

BISCUITS

1/2 Cup Warm Water ( approx. 110* )
2 1/4 tsp. or 1 pkg Dry Active Yeast
1 tsp. Sugar
5 Cups Flour
3 Tbsp Sugar
5 tsp. Baking Powder
1 1/2 tsp. Salt
1 tsp. Baking Soda
1/2 Cup Frozen Butter ( 1 stick )
1/2 Cup Frozen Bacon Grease
2 Cups Milk + 2 Tbsp Lemon Juice. ( buttermilk )
1/4 Cup melted butter for brushing tops

Combine Water, Yeast, and 1 tsp. Sugar in a small bowl and set aside.
Combine Milk and Lemon Juice and set aside.
Combine dry ingredients into a large bowl and mix. Use a cheese grater and grate the frozen butter
into the flour mixture. Use a pastry blender to finish cutting the butter into the mixture. Add the frozen
solid bacon grease and cut in with pastry blender. You should have a crumbly mix. Make a well in the middle
and add the milk. Mix with fork or spatula until almost finished combining and the yeast and continue to mix
until combined. The dough should be on the wet side and very sticky. Place mixture in refrigerator for one to two
hours. ( Best if made night before and left in the fridge over night )

Preheat oven to 425*

Scrape your dough out onto a ( well ) floured surface. Flour your hands and gentle fold the dough on top of itself
four or five times. Add more flour to the surface if dough is sticking. Flour your rolling pin and gently roll out dough
until around 3/4 to 1" thick ( roughly the width of your thumb ). Flour biscuit cutter (before every cut) and cut dough by
pressing straight down do not twist the cutter while cutting. Place biscuits in a butter pan. If you have a large black
iron skillet, I would highly recommend it. With a 3" biscuit cutter will make about 14 to 16 biscuits depending on the
thickness of your rolled dough.

Place in oven for 17 to 20 mins. After about 7 or 8 minutes in the oven brush the tops with butter. Biscuits are done when
the tops are a nice golden brown. If you have a temp probe, bread is done when internal temp is between 190* and 200*

We're making burgers on the grill tonight, bacon & cheddar for me, blue cheese for Mr, and plain for Baby. I bought some Checkers seasoned fries yesterday. We've never had them before, but I'm sure Baby will like them. That girl can eat some fries!

I shopped all the BOGO sales at Publix yesterday, about the only time we eat those fried clams. Since I cleaned and rearranged all my cupboards the other day, I need to restock all my canned goods. Since Walmart is the cheapest but I hate going there, I placed an order for pickup. They do the shopping & load all the heavy stuff in the truck. Win win!

Yes and another one today to remind me it will be here Monday. Thank you so much!

FedEx and the Post Office both notify me of packages. The post office goes one step further and emails me a photograph of piece of my mail one or two days before delivery and if I used my office address any package is also x-rayed before it reaches me in my now unused over a year office.

I serve mine over fried rice, but I have been buying tempura battered chicken now and oven cooking it after a tragic sauce pan accident [don't leave them in the oven on the self-clean cycle it gets as hot as a kiln!]

I will try the ho made version of the chicken to serve with my ho made fried jasmine rice in my next General Tso's creation.
