You render the back of chops ( like a rack of lamb ) in a cold pan then render. At this point and because of above. A grill would be good but instead you then use another frying pan ( steel ) and just cook like a steak.

So its pan fried chops. Baked rosemary and garlic potatoes. Yorkshire pudding. Giant peas. Steamed cauliflour. Beef and lamb gravy ( from chops ) with red wine and raspberry jam.

When serving you. Just add scatter the cooked garlic and season with crumbled baked rosemary. Then add mint sauce.
