HIV attacks the immune system (hence "auto-immune disease"). AIDS doesn't actually kill anyone by itself, it just makes them susceptible to other illnesses that a normal immune system would have no problem taking care of.

Covid attacks the respiratory system (hence SARS, severe acute respiratory syndrome) and in small amount of cases causes a cytokine storm where the body's immune system starts attacking normal healthy cells.
