Have a look at the charcoal under the empty meat counter. Completely full. Not one bag missing. Seems odd that power was out, all the meats are gone and the charcoal is untouched.

Back in 1890-1910 people thought canning was the greatest things since ... well since Sliced Bread hadn't been invented yet it must have been since the Bible was written!!

Factory canned, Home canned ... it was all new and and all good! (they couldn't do much home canning until the glass jars and lids could be made en masse in factories, Ball Canning didn't start making glass jars for canning until 1884)

Being able to prepare food, can it and then store it for future use, had a HUGE impact on the American Diet and what could be eaten outside of the growing/harvesting season.

Today we take it for granted, but nobody took for granted the ability to store LOTS of different type of out of season foods on one's shelves in one's pantry back then, and STORE UP FOOD they did once inexpensive canning became available (as long as you could afford the cost). My grandmother, who was born in the mid 1880's, always had a least a year's worth of food in her cool dark cellar storage pantry from self keeping grains, potatoes, and apples to hundreds of jars of things she canned plus lots of store bought canned items.

Canned MEATS were also something that she kept a lot of, something most people today don't even think about.

We use either propane or good old fashioned mesquite wood (preferable). I don’t know anyone who grills with charcoal.
