They are a remnant of the nephilim that has bred within their own abominated kind for an extended period of time. Due to this, they are much more intelligent than they get credit for, way more so than humans, they are not some dumb undiscovered animal. Due to being a remnant of the genetic abominations, they possibly do have abilities we just can't comprehend.
They are in a fixed state of evil, impossible for any good to exist within them due to being the unauthorized genetic abominations they are. The nephilim were known to have an insatiable hunger for human flesh as well.
Not sure why they leave some people while they eat others, but I would assume they know it would be too risky to outright attack people in certain situations as it would expose them and they are too intelligent to risk that. I believe a lot of the people that go missing in certain areas became a meal for them, when they knew they could easily get away with it without leaving any evidence behind.
"Bigfoot researchers" are fucking around with an entity they don't understand, a dangerous entity, and when the abominations know they can't get away with having them for a snack, they either just stay away not to reveal themselves or they end up taunting them and "playing games", just to prove their superior intellect to humans, while these dumbass fools believe they are chasing them around the woods and are going to lure them in by howling and banging a tree with a stick.

Humans can't hear things at certain frequencies. Humans can't see things vibrating at certain speeds, it becomes "invisible". Vibrations cause sound. They can vibrate at the perfect rate they become "invisible" to the human eye. Vibrations also cause sound, or can cause a sound at such a frequency that it deafens you, and when it reaches that frequency, you know what else that does? It disorients you! That is why it goes silent and you feel disoriented, it's like that sonic weapon that no one could hear that someone used on all those US diplomats last year that made the news headlines. Look into that if you didn't hear about it. It's the exact same thing.
