We do have canned goods but would like longer term storage such as rice, beans, honey, etc. Also, talking dried beans not canned beans. |

Seal the Mylar with a straight iron. It will suck out all the air. If you are that paranoid, freeze the rice and beans for 3 days then give a day to get back to room temperature. Beans are now routinely "dessicated" with roundup herbicide right before harvest to kill the plant quickly so that id will dry out by harvest time. Make sure you get beans that have not been. If you keep everything in plastic, especially flour, you will get tiny black bugs that will destroy all your work. Also, Keep in mind that some dry goods can come with insects already mixed in, so always pour your contents in a colander and toss it around a little to see what drops out below - you’d be surprised how much trash falls out. Then you can pour the good stuff in your storage containers. |

I store my beans, rice, corn, flour, etc. in 5 gallon buckets with screw-on tops, sealed in mylar bags, with oxygen absorbers. I live in the deep south, hot and humid. I have had 12 year old rice that tastes OK. Not as good as new, but definitely edible. Beans on the other hand, don't last over 6 years. After that long, you can soak them before cooking, pressure cook them, whatever, and they are still extremely hard. Flour stays good for 6 years, but after about 10 years, it smells and tastes different. We hardly ever eat any of the dried beans we store. It is just not something we like to eat, when we have other stuff. I have stored canned foods for over 6 years. Most don't make it. The cans of acidic things, like tomato products and fruit, corrode badly. Oddly, so does chili and beans. DAK ham and vienna sausage taste pretty good, after that long, though. I think you should save your money, and spend it on tools and seed to grow food. AND PRACTICE BEFORE YOU HAVE TO. Buy enough canned goods to last you for a couple of years, so you can have something to eat until you can grow your own food. |
