well you smoke it for some with butter so it does not dry out 90 minute to a few hours.. put chips in enough to smoke for that long enough coals to burn that long push off to the side and put the meat on the other side and set the draft and use butter often and cracked pepper and cajun rub.. you will be fine. then make tacos cos it will be good no matter what?

butter is the key and maybe a little pan of water.. I might do that next time.. it slows the smoke down and the drying of the meat.
