Cool thread! I’ve been working on processing multiple locally available foods into alternative flours. As long as I have electricity, I can do larger amounts with my mill and dehydrator but can also solar dehydrate and grind by hand if necessary.

So far, I’ve perfected my taro processing. Next are green bananas, breadfruit and Job’s Tears.
