So your software moves the telescope mount to center the rocket? Seems to work pretty well but why does it slip? Is the resolution of the servo motors not fine enough?

Wrong. It's rising into sunlight. Happens with twilight launches only.

The mount is only roughly aligned and level, plus the motors aren't necessarily hitting the commanded rates exactly.

My grandma's tracking software is light years ahead of yours.

Bahaha, you think my software is sending inputs at more than 500 hz? That's cute. It's a python program, it doesn't run that fast to begin with, and it doesn't really need to. The mount Jared was using is quite affordable, the gears on it aren't precise enough for that kind of temporal resolution to matter anyway. It did just fine for tracking the launch.
