I like to brine my poultry overnight and too do that you need to make a simple brine which is usually just water, salt and sugar, quantities are recipe dependent.
Optional extras, spices, herbs, booze, vinegar, your choice on what you like, loads of recipes out there and it does make a huge difference on the flavour, enjoy GLP.
