But that's the best way. You let it drain and put that bird on carrots, celery and onion, all chopped. Tent that bird after you slather mayonnaise on the skin and stuff the bird with rosemary thyme and whole lemons. Use a thermogenesis in a leg to know when that bird is close and 1/2 an hour before temp. Pull that aluminum off and that skin will be crispy as fuck. The meat? Like filet mignon. You are a welcome. Alton Brown's recipe is the best. I've done catering for 1000s for years on Thanksgiving and everyone loves the way it comes out. My turkey is brining as we speak. Mine, too--Alton's method. |

Theres tons of recipes online. most include a variation of brown sugar, vanilla, cinnamon , honey or butter turned into a gooey syrup mix thats baked with the yams before adding marshmallows [Delete Button Broken] |

Then put a stick of real butter in the cavity and another stick to baste with. Basting after an hour or so and then every 30 minutes. Moist and great tasting. Oh and we always tent till the last 30 minutes so it browns up. Muffin trays work well, too. I'm sure someone will say it is unhealthy but I've been doing this for years and my dogs have survived. Anyway, they've been known to dine on worse things. |

On the breast side butter between the turkey breast and the skin. Use an oven bag, take the bag off the last 15 minutes of baking to brown the skin. With an oven bag it will retain the moisture, cook faster, and there is no need for basting. Make sure you cut holes in the bag and add a tablespoon of flour inside the bag to keep it from bursting. You can overcook it up to 180 degrees and then let it rest at least an hour before carving but you are safe to take it out at 160 in the thickest part of the thigh. I plan to go 180 and let it rest. Supposedly the meat will seize and relax creating an even more tender meat that way. I did not stuff it though some say you can. I am doing it breast side down with flavored butter inside and out and will flip it at the end and crank it back to 300 for the last hour uncovered cuz I love crispy skin. Geez I hope I am right... I really want a good turkey! You still have time to do this is you eat later. Also a teaspoon of sugar in your mashed potatoes (just barely a smidge) will greatly improve them although I don't think mashed potatoes need much improvement. Anyway, they've been known to dine on worse things. Yes anytime I make a whole chicken I make broth out of the carcass and scavenge the bits and pieces with leftover veg and do this. I put it in ice cube trays. The broth I use for us humans but I've been known to give it to them too if I can't get to freezing or canning it. They love it. I also give them raw meat when I trim. Vet said it's good for them as long as I'm fairly sure of the quality and freshness of my raw meat. My animals have never gotten sick and I've had a lab last for 22 years! For shits and giggles take a few handfuls of your dressing and turn it into stuffing by putting it in the cavity of the bird. Make your normal casserole of dressing. Taste each side by side = you will never go back to dressing ever again. |

A 12 lb. turkey cooks in only 1.5-2 hours. Quoting: RoyRoj Dry brine it a day before cooking. (Make gravy separate (or buy it) as drippings will be salty). I always use the fat from the pan mixed with flour but chicken broth for the thinning. I've found that way I get superb turkey flavor without too much of the seasoning from the coating. Thanks to my new friend above I'm gonna try to flavor the broth this year with apricots and rosemary. But just to be safe I'll do a new batch and same old batch! There's always enough fat and I love love love gravy. It's the only time of the year I eat it so it's like my holiday crack. It is my fav Where are you from? I'm wondering if this isn't one of those localized treasures like Old Bay for the Mid-Atlantic. I've introduced old bay to so many of my Texan friends. That missing something something is the celery seed. Just adding celery seed (not salt) to alot of things really make it pop, coleslaw being the first that cime to mind.
