It has been soaking in an injected brine and natural body juices for weeks, if not months. Hot temperatures can kill most germs — usually at least 140 degrees Fahrenheit. Since you normally cook a bird to an internal temperature of 155 or so, then remove it from the oven where it continues to cook itself for 10 or so min, this should be more than fine. It'd be my luck that meat plant worker had just finished digging in his tape worm infested ass prior to packing up my turkey bird. Thanks anyway, I'll continue to rinse my turkey in the sink with a mix of bleach and water prior to cooking. I feel much safer doing this. |
