After which they should thoroughly wash their sink and counters around it to ensure no cross contamination occurs. This is basic food handling. |

I will ALWAYS rinse the bird well. Really well. It has been soaking in an injected brine and natural body juices for weeks, if not months. Hot temperatures can kill most germs — usually at least 140 degrees Fahrenheit. Since you normally cook a bird to an internal temperature of 155 or so, then remove it from the oven where it continues to cook itself for 10 or so min, this should be more than fine. After the COVID lies, I will NEVER trust any guidance the CDC issues. |
