They are purposely turning it a little bit to prevent the sun from destroying the sensitive receptors.

But the different observed path is probably from the light path through Earth's atmosphere coming through at different angles. WHen you look at an under water fish to try and spear him, you need to correct for the index of refraction effects, which differ for various viewing angles.
