Meat also has seasons - it's why we have turkey for Thanksgiving and ham at Easter.


Pigs, who eat apples and nuts on the ground (food we can use too) would be slaughtered in the fall, and the meat cured over winter. Come Easter, it would be great eating.


Turkeys take about six months to mature for eating, depending when they hatch, that can make them perfect around the end of November.
Eating the turkey then also makes it unnecessary to feed the ones you kill over the winter - a big plus in subsistence farming.

And beef.....

the cooler months are kind to cattle.

Gone are the stinging flies.

Cooler weather favors them fattening up to stay warm.


Beef slaughtered in the late fall/winter tends to be well marbled.

if you didn't, they would not survive year to year to reproduce.

not all stock is killed for meat in any one year.... and in America, especially not sheep.

we favor lambs, which are more typically born in the spring.

I've noticed milk changes with the seasons.

Maybe it's what the cows eat.

the farm next door takes 800-1000 cattle to sale every week without fail.

it always amazes me how farmers who are multimillionaires live in houses with leaking roofs and 70's interiors.

25% of non organic cows food source is now rapeseed meal.

one book I read a decade ago addressed this to a bit.

Apples, plums, etc are intended to help us fatten up for winter. They contain a lot of fructose which seeds and meat and grain do not.

The sugar ALSO helps raise our blood sugar, which protects to a degree against frostbite.

Some amphibians that survive freezing in the winter and come "back to life" in the spring have VERY high blood sugar levels that prevent their blood from freezing.

Nature is not fully known to us.
