my favorite chocolate recipe is:

1/2 cup melted coconut oil
1/2 cacao
1/2 date syrup
1 tsp vanilla


blend in pot and cool in fridge until top is hardening and bottom still gooey ...then scoop onto wax paper and store in fridge.

Oh, it's messy but yummy ooey and crunchy at the same time

I don't like to drink cows milk.. never did in fact..

for my every day milk I buy a high quality organic soy milk...(I used to make my own.. but time and other issues I stopped)

I fill quart jars with 1/2 soy milk ... and then about 3 TAB of almond flour and fill to top with water and shake. I like almond and soy together. Its my all purpose milk.

another favorite is chai seed bread


1/2 cup chia seeds (or flax)
about 1/2 cup water
1/2 tsp baking powder
salt to taste and any other seasoning you like
Blend


grease/bake at 350 for 10-15 approx till firm (I flip at 12 minutes)

do you like SUPER firm tofu? and FETA cheese. I make FETA tofu... soak the block in salt water a couple days.. and then pick on it until have eaten it all....
The super firm brand I like.. is Nasoya SUPER FIRM... and it is low enough in water to absorb the salt water. and it is not floating in water in the container.

Also its the best brand because of being low in water.. to cube and brown up in your favorite sauce and freeze it. great added as protein to salads and stir fry etc. I like to eat the stuff frozen as a snack.

The less firm tofu does not freeze well... it ends up looking like a sponge... as the water leaves it during freeze. This one above does not do that. being super firm.. it has 14 grams of protein in it...per 1/5 block. Best tofu ever.

I don't make the whole gallon... I make 2 quarts and refrigerate the rest of the soymilk. I usually use it to make soy kefir... and I am out of that.. so todays 2 quarts will go into my milk and rest fermented as kefir. I ferment that in quart jars only half full and then after its fermented...I add any favorite pureed fruit to the top and let it ferment a bit more and put in fridge.. My favorite fruit in this believe it or not is black grapes... makes a gorgeous purple color...

But I like any fruit in the kefir that I like otherwise... except bananas and apples. I have used fresh.. frozen and canned fruits...

I also ferment my own kombucha.

I could ferment my own soy yogurt or milk yogurt but I like the convenience of buying that. I buy top quality greek sugar free yogurt and add what ever fruit i have on hand... I add a couple drops of stevia to my dish if I want it a tad more sweet.

Favorite greek is Fage... but I often buy Walmarts house brand in quarts...fat free because its $2 cheaper a quart... and works ok.. much better that say King Soopers (here in Denver) house brand.. MUCH MUCH BETTER in fact. just a little short of FAGE.
