Nowadays I like roasting Cacao beans after soaking.
Soak them like you soak your nuts, seeds, beans and grains....
It frees up iron...

That's why there shd be whole raw unfermwnted beans so the peels can be included in the process. That's actually imo the biggest part of the chocolate flavor not just fermentation....
