Nowadays I like roasting Cacao beans after soaking.

Soak them like you soak your nuts, seeds, beans and grains....

It frees up iron...

But.. a huge but. It's hard because they're fermented.. which means the peels shd most likely be discarded first. That's why there shd be whole raw unfermwnted beans so the peels can be included in the process. That's actually imo the biggest part of the chocolate flavor not just fermentation....

They're fermented but not the right type of fermentation that is edible raw really. It's meant to be Roasted after that.

Also not fun peeling fermented moldy beans with your hands.

Neither is cleaning the crap off dirty pulpy beans that have been dried on the ground pretty much...
