A bay leaf makes all the difference. Extra carrots, onion and celery for bigger chunks in soups. Split pea is by far the easiest and most forgiving, lentil is next. Split peas and lentils are a dollar a bag. Pasta Fagioli is equally easy. A box of ditalini, a can of bean and a can of crushed tomatoes. I make mine vegan, but pork fat and scraps in soups if you so inclined. A fist full of barley works in all soups to fill it out. It costs about $5 for 2 quarts of soup, $6-7 for organic. Keep cans of beans and tomatoes on hand, dried peas, lentils and pasta. Freeze all veggie scraps for stock, save pork fat, have bay leaves. Chunky soup is like $.20/ounce, whereas homemade is about $.09/ounce, $.12-15/ounce if you make it organic. If only we could, somehow, get food to grow on trees ... |

We then, eat 1/2 and freeze 1/2. And when ever we want soup or chili, simply thaw it out over night and re-heat on the stove the next day, (I don't use the microwave) .... |
