Why don't Satellite Dishes point straight up into Space where the Satellites are...Why do they point at an angle and directiion of a cell tower ?

The satellite isn’t ‘strait up’ as you say. An example is visualize the angle and azimuth needed for dishes in Texas vs California if the target satellite is directly over about Mexico City. This is for Geosynchronous sats. Starlink on the other hand is basically strait up.
