Whether the ball Earth model is accurate or not is irrelevant to the accuracy of the FE model. It must stand or not on its own merits. The most basic of which would be an accurate MAP od the Flat Earth. Where are the edges? Do you subscribe to the Antarctica-all-around map, or a different one?

You won't accept any pictures taken from space, so that's moot.

As to why there would be two different points the heavens would seem to rotate about, it's because you're looking from the "top" and "bottom" of a 3-dimensional object rotating. There *has* to be 2 points of rotation and voila! There are.
