I told you back in May,
Wikipedia is wrong. There are at least seven types of Lard, not four. At least. Wet rendered lard, because of it's high palmitic acid content, is a type all on it's own.
You know how I feel about this subject, so please can we all let it go?
No, John. With respect, I did not read that book you sent. Industrial Lard is very different from Artisan Shortening. So while I am grateful you took the time to send the book, I don't need to read about the modern American Backfat industry.
Guys, can we drop this subject now?
