Any boat people here? I have a question about both size
If I wanted a boat to take off the Jersey shore for fishing. Chesapeake Bay. Maybe even take a little trips down to Florida and back up to Jersey. What is a small to medium size boat that can handle that. In good weather conditions. I don’t know enough to go out in bad weather conditions. I’m not stupid enough to do that.

Wrong, Most Larger Boats have a diesel engine and get way more. The smaller power boats that you go fast on, suck ass though and never buy one. You can go fast to no where then turn around and go fast back.. Not a real joy to have after doing that twice. That's why people sell those pieces of shit within a couple years.

Even in a 30' boat, the Gulfstream is going to be kind of exciting.
I love boats, but they are holes in the water that you throw your money into.
There are lots of great coastal cruising forums where you can get some very informed if opinionated answers better than you will here.

Are you talking about occasionally driving the boat from New Jersey to Florida or trailering the boat down to Florida and then putting it in the water and using it to go fishing? Those are two completely different things.

Sailboats:

Consider anything under 30' a weekend boat.

A novice often does well with a heavy full keel boat with a simple rig.

My recommendation is that you buy yourself about a 25' trailerable boat and you and your wife get in a couple hundred hours on that learning the ropes. When that boat is on her side making good head way there is no comfort aboard. It's actually a bit unsettling riding a boat that seems to be about to roll over. And if you do something stupid she might dip her mast in the water.

I boated the Chesapeake for many years in a 36’ power boat. I wouldn’t go with anything smaller than that for the kind of water you’re thinking about. You don’t need bad weather to encounter 3-4’ seas, and smaller boats get tossed around pretty good in that. Even on the nicest day you’ll be going through very squirrelly water at certain points, like in the Delaware Bay and down at the end of the Chesapeake before you cross over into inter coastal waterway. It’s not that it can’t be done in a smaller boat, but you need nerves of steel. Also, smaller boats are not fun to live aboard for extended periods. It’s too cramped and uncomfortable.

Most of the time I would be around Cape May, Chesapeake Bay, just a couple of miles off the Jersey shore for fishing. But I would like to occasionally head on down and hit other spots on the East Coast, may be as far as Florida. It would be nice if two or three people could sleep in it. When we got to those other short points in other states, we would hit restaurants, or just fish off of their costs and then sleep in the boat and then move onto the next day.

I live on a lake, and am about 45mins from the coast.
Don't buy new unless you have money to burn, or plan on using it a lot. Sooo many boats are just docked, and left to rot for years after the fun wears off.

I have a 32 footer with a 200 Honda outboard. I take it out maybe 4 times a month. My airboat gets much more water time, and was a hell of a lot cheaper. Not to mention, better on gas, and I can drop it from my lift and be cruising the lily pads in about 5 minutes. No way I would take it off shore though.

Get a used thirty footer with a decent outboard.
Pay cash. Get the motor serviced. Hydraulic lines checked.
New tires on the trailer. Don't forget to grease the bearings for long trips. Less chance of buyers remorse, and if you get bored of it, the resale should be close to what you paid.
