Paying or offering to pay with LEGAL TENDER means you cannot be sued for non-payment of a debt.
Therefore, order your coffee, cakes,... offer LEGAL TENDER bank notes, and if they refuse, you walk out.

In a service-restaurant or a petrol station, your debt could already be unrecoverable if the food/gas is inside you or your tank, respectively!
