Maximum Doom: Beer is screwed....largest natural CO2 reservoir gets contaminated

To my knowledge there are no large scale commercial brewers that don't use CO2 in their process. It makes it much easier to turn out good product.

Without CO2 you are a craft beer maker willing to accept a degree of variation from batch to batch.

I've never made a lot of beer, but when I do I use a CO2 tank to dissolve a lot of CO2 into the beer before I bottle it. Otherwise I either:

Have to hold it under pressure from the early stages without ever letting much pressure off of it lest I'll never get it back, or...

I have to add corn sugar to bottles to develop carbonization in the bottle resulting in a cloudy beer with lees.

All beer produces CO2 and if you brew beer you know that it's not an absolute certainty that you will get the necessary CO2 as well as keeping the fermenter at the correct pressure and purging any oxygen from the tanks as well using them for filling kegs. every brewery needs CO2, even if you make a brew with the right amount of CO2 from fermentation, you still need more to process it and make it not flat. I brew beer at a brewery and hadn't heard of this shortage

The big boys all add CO2

Most beer produced in the United States is forcibly carbonated by injecting pressurized CO2 into the liquid. It can take up to two weeks to naturally carbonate beer, so few breweries do it for economic reasons.

The majors usually have a CO2 recapture system and reinject captured co2 from the fermentation process which saves them a lot of cash
