Well this is truth. My dad is a hydro geologist
And hes chased fresh water resources globally most specifically on islands where fresh water is always a challenge. When bottled water came out he told me not to drink it if at all possible. But then he said and NEVER drink Nestle. As a side note...he wierdly in his old rerired state haha now travels around the east coast small towns and anaylzes their water towers. Hint...its not good.

cacao doesn't even need fermentation, you can just sprout it on your own but they seem to have standardized the process.. and so its hard to find uh, raw cacao beans without fermentation....

anyways that's not to say that fermentation isn't useful... but I just know that fermentation is not always required...and they seem to have standardized this.. and now there's this "ruby chocolate" which is popularized... which is , it seems unfermented cacao, or low fermented cacao.
