Especially the texture. It's dry, it's tough, it's like it's been mixed with some type of fiber or cardboard pulp or something. I find myself spitting out mouthfuls of this fibery stuff that doesn't taste like beef at all. It has no flavor, it really doesn't render much fat, and I don't understand what it is I'm even eating. I try to buy lean grassfed ground beef, think something good quality. But every time I cook it, it just tastes worse. I don't like ground beef that's been fed things like gmo corn. It's gross, I never buy it anymore. We just get a nice steak and divide that, same price usually anyway. |

Still, I agree it has a somewhat pasty, odd texture to it that it didn't use to have. I have also noticed that buying from an actual butcher, the quality is much better than box store quality. The only exception so far for me has been Costco. Not at all sure why. Goodbye, halcyon days... There is a theory which states that if ever anyone discovers exactly what the Universe is for and why it is here, it will instantly disappear and be replaced by something even more bizarre and inexplicable. There is another theory mentioned, which states that this has already happened. |

Went back to buying half a beef, grass fed, local. Best ever. Back then I claimed Wally was beating those cattle to death, but maybe it's the carbon monoxide mentioned above. Just had a chicken and dumplings dish, with Wally chicken. Not too bad, but I got one bite of chicken that was just absolutely horrible. WTF Wally! |

Switched to local butcher shop that does all in house processing from local and Amish beef, so good like it used to be. It took a while to convince my old lady how bad the bulk stuff had gotten. She finally noticed how bad the bulk was when she took a bite of a burger made from it, and it was like pure gristle without the flavor, like old horse meat. That's when she agreed to switch to butcher shop. |

By the time I get in the store to buy groceries the only stuff left in produce, meat, & dairy is the dregs which usually go bad before the best used buy date. Some stores have been caught on camera dipping old meat in blood and repackaging expired meat. Plenty of YouTube videos demonstrating the practice. The butchers have a technique of gluing parts of the meat together to create the appearance of a finer and larger piece of meat so your steak or chuck cut that you are grinding into burgers might have been made up from discarded pieces…it is very hard to tell the difference from just looking at it. Here is an old video that might help you figure it out. If the grocery store is grinding their own burger they might be reusing unsold meat that was previously glued giving your bad burgers that foul taste and texture. |
