Anyone ever made good creamy chicken enchiladas?

This one is pretty good. I have used many Taste of Home recipes and so far they have all been delicious..

Take frozen chicken burritos, put in a pan, cover with green enchilada sauce, peppers, olives and loads of cheese, bake. Simple , good.

I used to LOVE the white creamed chicken enchilada or maybe it was burritos, but from Chi-Chi's back in the nineties. They even had that version in the grocery store while open.

Had to look it up.

^okay that is seafood, but substitute chicken. I would.

Chicken Suiza Sauce

1 can tomatillos
1 can green chiles
Handful of cilantro
Tablespoon oregano
Juice of 1 lime

Puree in blender and pour into saucepan, turn on heat.

mix 1 tablespoon cornstarch with 1/2 cup hot water, blend until smooth, add to saucepan and stir in while heating.
When bubbly, add:

4 oz. canned milk, Mexican Crema, sour cream, cream cheese or cotija cheese

Stir until smooth.

Build your enchiladas or strata.

don't blend anything.....that sounds disagusting.


cook your chicken in a skillet with some sour cream....i like to add mushrooms and spices as well.


that will make your filling creamy and the chicken crazy tender.



then make your enchiladas, cover in sauce and cheese and put it in the oven.
