The expression is "I couldn't care less" not "I could care less." If you say "I could care less" you are saying that you care at least a little bit because you have the ability to care less. How is this not fucking obvious to people? It is simple linguistic logic. Have public schools really made Americans that stupid?

As a non-native speaker I got very confused some time ago which one is correct since I suddenly started seeing "could care" everywhere eventhough I'd always thought it's "couldn't care". Sure the latter is more correct from the logical standpoint but language doesn't always follow the rules of logic.

Oh, and there's that:

"I couldn't care less".

There is no other subject that the person making this statement could care less about. That means it is the subject that the person cares least about.

That is how I understand it.
