If it's a smart phone it's way easy with an app purchased. There are several available, one of such is spy bubble. You only need access to the phone briefly to install it. You can then set it up to forward to your phone.

If the person was sneaky enough and had a 4.00 sim card cloner they could clone your sim card in about a minute and have your sim back in your phone in under 2 mins and then every call you make or receive their phone can listen , every text sent or received shows up on their text app like they sent it.
