A lot of meat has a sweet to it. Ever heard of sugar cure?

No I understand but when I have dried meat I want it to be not too dry not too wet.Just nice and salty with white fat at the end of it. Maybe people make it themselves I'm sure but the store brands are a bit weird. Too many flavors. Guess I have to get used to it. It wasn't terrible just weird.
