I think I figured out why from this article: Sprouting the Potatoes While the bag of grocery potatoes you leave in the cabinet will sprout on their own, that doesn’t produce the healthiest sprouts. Spread the potatoes on a level surface in a warm room with bright, indirect light. Mist them once or twice if the humidity is very low. Allow the sprouts to grow until they are about three inches tall and showing healthy green leaves. Problems with Sprouting Potatoes require a dormant period to sprout. If you store your potatoes – especially homegrown potatoes in a warm location, they won’t sprout because they need a period of cold first. Put them in the refrigerator in a paper bag for two to four weeks. If you’re trying to grow grocery store potatoes, those that are conventionally grown may have been treated with sprout inhibitors. If anyone does try this method, don’t make the soil more than about 20 inches deep, as there seems to be no benefit from going higher ( like in a large, deep drum or bucket). |

If you are going to grow potatoes in the ground, then any variety will do. If you are growing in towers, bags, buckets, etc., then you need to be sure you have the indeterminate variety to get the full effect. Determinate potatoes grow in an outward, single stratum. Whereas, the indeterminate variety will grow all along the stem structure as the plant itself gets larger and taller. You don't "hill" or mound determinate varieties except to make sure you don't expose any near-surface tubers to the sun--which creates a greening of the tuber and the genesis of a chemical called solamine, which is highly poisonous to consume. |

Years ago, my late hubby tried growing potatoes in a plastic trash can, using sawdust as the growing medium. It actually worked pretty well as far as producing lots of nice-looking potatoes and they were very clean; our issue was that we didn't realize the potatoes would take on the "flavor" of the sawdust! He'd used cedar, and the potatoes tasted like pine cones! So, use a "neutral" wood (like apple, cherry, etc.) to make your sawdust/shavings for your potatoes!
