1lb of jerky is equal to about 2.5lbs of raw meat, so yeah you are likely putting your body a bit out of balance in terms of nutrients. The sodium might not cause any issues with your heart, but high sodium levels do cause increased calcium loss from your bones so it isn't something you want to do long term. For short term eating, just make sure you drink enough and maybe take a multi-vitamin to balance out the foods you are likely not eating.

Just yesterday, I went to get out a bag of “high quality” beef jerky I’d opened a few weeks ago. The stuff should last almost indefinitely, right? It even still had one of those “do not eat” desiccant packets in it, to prevent moisture.

Anyway, something went wrong! It had totally molded, and looked completely disgusting! I’ve never seen that happen before, but I won’t trust this brand again now!
