Almond milk is not a good substitute for whole milk in baking
I made some corn bread muffins using almond milk as I don't drink cow's milk. I used a silicone coated muffin pan AND hosed it down with Pam spray.

Muffins cooked fine but could not get them out of the pan without tearing them into crumbs.

The muffins are just crumbly period.

I believe the almond milk doesn't work for baking and it's the first time I have tried it.

Seems the almond milk is lacking the fat needed to glue this together.
Would you consider adding butter next time to make up for the missing milk fat??

Why are humans the only ones drinking breast milk after weaning?
And it's not even breast milk from our species.
Its breast milk from a huge mother. It has a different composition of protein and fats meant to grown a large baby into an enormous adult.
The dairy industry is also extremely damaging to the mothers and babies.
Male babies are either shit in the head right after birth, or they are chained up and imprisoned in little huts, and then murdered as "veal", after a few weeks.
The girl babies are enslaved like their mothers before them.
The machines hurt the mothers and there is always blood and pus from sores in their breast milk.
The mothers dont get to live a normal life. They are tortured every day of their short, sad lives. They die much earlier than they should when they are murdered on conveyor belts

And humans think these mothers are treated "humanely".

If the least of what you suffer is a change to your recipe, consider yourself lucky. You may come back in your next life as a cow.

Baking is chemistry. Learn how to bake. There magical resources out there called BOOKS. Try cracking one open or buying a cheap one on Kindle. And alternative baking is very expensive. Also you tube. Maybe stop living in ignorance.

I am so sorry that you have so many replies from a holes. I understand where you are, as my whole family has to be gluten free, dairy free, vegetarian, and cannot have chemicals in their foods. This being said, gluten free and dairy free go hand in hand.
Almond "milk" is from almonds and water. Almonds also have lignins that are not good in large quantities. I have found that keeping one percent shelf stable milk, used only in baking in small amounts, is okay on occasion. Don't know if this will work for you, but if not, try making oat milk. My daughter uses oat milk in her baking and she seems to like it.

It’s not a good diet long term. Plus you need supplements like b12 and choline. Many can’t live on plants. Their gut doesn’t like it. Put them on a more carnivore diet and their gut calms down and they lose weight. And you can live on that without supplements. Get rid of processed foods.
