To all the air fryer peeps out there. I bought one but have yet to fire it up, as just don't have the time to figure it out, and I heard it was noisy, but anyways, my sister said she read all up on them (she's a health food nut) and that they're really not that healthy. Something about the way it cooks the food really fast with the hot air isn't safe, IDK, just repeating what she said, she's pretty expert at this stuff. Personally, I don't care and would still us it.

Easy fried chicken, doesn't need (butter)milk, eggs or flour, though it does use potato starch, which I don't have... yet.

Never mind! I just read the recipe I linked to and they tested corn VS potato starch... corn starch is the winner since potato starch makes things too sticky... finishing reading it now.

Exactly, and I like the "eat this, not that" method. Like maybe you like fried foods but don't eat sugar, don't drink soda, don't drink beer, and don't overeat, then I think not a big deal.

My grandparents ate all kinds of fried foods and lots of fat. My one grandfather would take all the fat that anyone cut of a pork chop and eat it. He lived to be 85 and his father 102. Plus they smoke and drank, but he rolled his own.

I like fried vegetables, been trying to hone in on different batters.

Just saw an Asian one where she added a small amount of vinegar at the end to make bubbles to make the batter airy, pretty cool.

I also love homaid french fries. I like to cut super tiny french fries, make sure to dry off really well, then fry in batches, then when done refry them all together at the end to make them extra crispy.

Asian cooking double fries lots of things, especially chicken, to make crispier. It's kind of cool, because you can fry in batches, and then at the end do a quick fry so everything is hot all at once.

LOL< I bought potato starch a few months back because it kept popping up in Asian fried cooking. I got it at nuts.com. They have all those weird flours.

Yeah, that's why they add beer. How it works is you put the flour/cornstarch, and then the baking powder, then at the end put in the "bubble maker", like beer, wine, sparkling water, vinegar, etc. If you add something acidic like the beer or vinegar it reacts with the baking powder and that creates the bubbles to make it airy and crispy.

Fat in general has been extremely vilified over the past several decades because it doesn’t fit “their” agenda. I read somewhere that the human brain is like 75% fat.

No doubt there’s a major obesity problem in many western countries. But I personally attribute that mostly to refined sugars and ultra processed crap. All because people don’t take the time to cook with real ingredients.

Like you said, I’ll fry with oil from time to time but I’m very cautious with refined sugars. I also avoid premise crap altogether.

Thanks for the Japanese fried chicken recipe for my air fryer. Don't deep fry. Really is very good.

Always substitute corn starch for potato starch. Very lite coating on chicken & veggies as compared to flour.'


I'm going to try potato cakes in my air fryer. Combine 1 large peeled, grated russet potato, 1 beaten egg, 1/4 finely chopped onion, garlic salt, pepper, a bit of corn starch.

Make into patties and cook in an air fryer.

Thats what iv been wanting to make. Although never bought before.

Made onion bhajis. Nicer than most places. Then you need a mint dip. Not the ratia kind. It tastes and smells a bit like paint ( emulsion paint ). Which goes with bahjis but also tandoori chicken with fried onions. Thinking either a byriani rice thing. Or a cucumber cocunut salad.

Might order a freezer of chicken legs.

If it's 120v, understand you can only fry about 2 big Idaho Russets as fries, and that's the max, unless you plan double frying, etc.

I recommend finding a 240v version or a big pot of oil on the big burner on the stovetop.

I was always disappointed at not being able to maintain oil temperature for crispness with 120v.

Except in frying fresh corn tortillas.
Whole lot less mass, and no problem holding perfect temperature on 120.

I'd fry blue corn tortilla chips and while they were cooling I'd splatter them with Tabasco and salt.

Thinking about the 120v limited power problem....

You might try nuking stuff before the oil dunk!

Batter, then nuke a bit to hot before the oil dunk!

The perfect crisp is oil holding its temperature perfectly, like in a huge fry pot, or deep fryer.

Old Sophie told me the best chicken ever in the deli was the first hot fry of the morning, after all-night heavy brining.

She was right.
