The absorbent is added because the cheese your about to add has natural oil in it. If you don't add enough of this it will make the bread your baking it in soggy. It should be almost a 50/50 mix Roll out a loaf of bread dough to about 1/4in thick Spread meat mix across dough, cover with favorite taco cheese, onions, olives, jalapeno (if you like them). Roll up dough to form a loaf. Similar to how you would roll cinnamon rolls. Let rest covered for 45-60min. Bake at 375° until golden brown approx 35min. Remove from oven let rest 5mins. Slice 1inch thick Serve with shredded lettuce, tomato, sour cream and salsa Taaa Daaa Meat in a loaf It's excellent the next day cold |

Meatloaf was horrible in the 1950s and it's still horrible today. Wtf? There are millions of better things to cook. |

I toast a few pieces of Italian bread and put them in the bender for the bread crumbs. Small diced garlic / onions / peppers (sautéed) Sometimes, I add diced sautéed Shitaki mushrooms. Add a couple of eggs, and enough milk to rehydrate the bread crumbs. You can add a little shredded cheese if you like. Salt and pepper to taste. Form into a loaf and bake in the oven at 350° F. until it reaches an internal temperature 155-160 degrees F. I set the timer for 30 minutes, then top it with a mixture of Ketchup, tomato paste, and a dash of Worcestershire sauce in the last 5-10 minutes of cooking. Serve with garlic smashed potatoes and roasted carrots. I make fried meatloaf sandwiches with any leftovers. |

But the one tip I remember that caught my eye years ago was to put slices of bread in the bottom of your loaf pan. They are supposed to catch the grease that drips down to the bottom, and then when you remove the meatloaf you just tossed the greasy bread. |

Quoting: Anonymous Coward 84204760 Much easier to just use a cookie sheet on the bottom rack with the loaf pans on the top rack. I recommend using cast iron loaf pans from Lodge. You can fill the loaf pans to the top without any fear of leakage/overflow. None thus far have mentioned the secret ingredient, which is the way the chef Emeril makes his meat loaf. Put cheese in the middle of the loaf. I like mozzarella and cheddar. |
