I had a ridiculous number of yellow star fruits (Carambola) on my two little trees this year.. I thought about throwing all the healthy medicinal fruits away....but.... being a natural hoarder...

I sliced em up, and put the starry slices in the oven at 170 degrees for at least 5-10 hours.

The little yellow stars come out chewy and taste better than the original fresh star fruits!

If you keep them drying longer, they apparently turn into crunchy chips too. Each fruit has only 30 calories. Star fruit helps lower cholesterol and blood pressure and is packed with nutrients like potassium and niacin.

Just be sure not to eat more than two or three whole star fruits per day--- they contain oxalic acid (like spinach) which can give people kidney stones if you eat too many.

Hey thanks for the tip. I was studying the nutritional value 10 min ago.

My 2 trees are loaded also. We sliced and froze some. They held up well and make a refreshing snack. I still have more on the tree so I will dehydrate those. hf
