My father in law took off for the winter and left "pasturized process cheese food" like this out on the counter for months and it looked exactly the same, while everything else that should have been refrigerated rotted. |

[link to www.thedailymeal.com (secure)] [link to spoonuniversity.com (secure)] [link to en.m.wikipedia.org (secure)] bingo! cheese, real cheese, is fine for extended periods at room temp. if it has lost 85% or more of it's moisture through maturation (parmesan, grana padano, and pecorino romano are prime examples) then it is 'room temperature stable' and doesn't require refrigeration. the only cheeses that I would worry about being at room temp for a long time are those that are normally in the dairy case with the milk/cream or those that are very high in moisture (cream cheese, cottage cheese, ricotta, labne, fresh mozzarella, et al). cheeses aged in brine are also fine at ambient temps as long as the cheese stays moist/submerged (feta).
