Always love to try new recipes Well the "Raw" peanuts I am used to seeing are dried...just not roasted...so we may be talking about the same thing when I say "Green peanuts"...I've been told by a few people that if you eat I guess a bunch of green peanuts it'll upset your stomach...never really tested the theory..lol....anyway...it's not as much a recipe per say as a critical step or "trick"... Here's the typical recipe I use...put peanuts in pot...plenty of water...I put a whole box of salt in...some garlic and black pepper and cayanne pepper. Bring to a boil...boil for one hour for a big pot...no more...so the trick is this...remove them from the heat....DO NOT DRAIN the pot...let the peanuts cool in the cooking water, stir them time to time. This causes the hot peanut in the shell to draw and filter some of the salt, pepper, garlic water back through the shells as they cool off. After all the peanuts are "sunk"...the water will be still a bit warm, then you can drain em, but don't rinse em. That is very similar to the way I do it. I have a Cajun spice recipe Ingredients: One batch in a crock pot 1/3 cup sea salt 1/4 cup chili powder 1/4 cup Hungarian paprika 1 Tablespoon onion powder 1 Tablespoon black pepper 1 Tablespoon dried basil 1 Tablespoon dried oregano 1 Tablespoon ground coriander 1/2 teaspoon cayenne pepper 2 teaspoons dried thyme 1/4 teaspoon cumin 1/4 teaspoon white pepper. I do the same thing you do expect I leave the peanuts in the water for about 5 to 7 hours, I taste them to see if they are ready. I do not rinse. |

Have a stack drying now ... and just canned 30 quarts to put back for winter. We eat them raw right out of the garden during harvest time. I am going to take the ones that are drying and roast them. Going to make fresh peanut butter. Looking forward to trying fresh peanut butter with the blackberry jam/jelly and raspberry jelly we canned this season. Peace Ponder That Will Ya ... |
