Re: Food with Attitude!
Wonderful kitchen S27, and great dinners everyone.

I fell asleep again so am now having the roast as a sammich having not made the fry bread as I was asleep and Mrs. cooked the roast.
 Quoting: Louis in Richmond

Fry bread? I guess I missed a lot.
The Indians make fry bread down in Tucson.

I never had it but people love it. It's just bread dough fried in oil and then sprinkled with sugar I think.
 Quoting: Half Past Midnight

I guess they could have sugar on them. I was thinking more like a crispy bread, like a thick flour taco.

Here's the simple recipe I'm using. [link to thestayathomechef.com (secure)]
 Quoting: Louis in Richmond

Will you be making the bread today?

When I was a kiddo we used to get fried dough with powdered sugar on top and it was SO good! Carnivals/fairs used to always sell it. :)
 Quoting: Simple27

I will make it if hunger gets he better of me. I'm out of beer and half and half so no beer or coffee today. I want some but want to dress and go to the store even less.

I think they are called elephant ears? When my kids were little, I would the frozen bread dough & let it thaw. We would cut in into balls, fry it, & then roll it into sugar. I think we even used pop on the counter biscuits in a pinch although they weren't as good as the bread dough.

I always get funnel cake every year when they have a festival. I tried making them at home once with Baby from a recipe I found online. They were good, but messy to make!
 Quoting: Paranoiaaaaa

oooo, fair and festival season is almost here as well!!!

mmmmm

I take weeks off to recover from a night of that wondrous food!

WOW. Really nice!

That backsplash looks like real tiles. I mean it looks expensive.
 Quoting: Half Past Midnight

The tiles are real but they weren't too expensive. About $2.50 per square foot. He spent roughly $100 for the tiles/glue. Not having to pay someone for the labor was a huge savings! :)
 Quoting: Simple27

Kind of like learning/knowing how to cook from scratch! I recall an entire decade of having only bber in the fridge and vodka in the freezer. Thinking back on how much money I spent eating out and on expensive wines that were (for me a tax write off but I didn't do taxes for a decade so who cares) very nice boggles my mind. Even with the pretty much industry (at a certain level) stardard for 50% of meals (specials not main menu) across Vancouver it was still huge. I actually used to eat 3 meals a day.

I forgot how to cook seemingly. But then my sons mother and I got together, the first long 'date' we went on was a job of hers. I was there to look after her daughter and help, at zero pay but free food and drink, it was a month in the bush lafway up the Alaska Highway making food for tree planters. Cooking came back to me. I also learned to chuck rocks and yell loudly (in a basso it echoed in the valley) at grizzlies and shoo them off.

Then upon the birth of my son, we opted to eat out locally once a month and it felt good to do so. Then I bought the farm with my friend (almost typed fiend same-same) we did a communal eating thing. With on average 17-20 people eating a ho-cooked meal every Monday, Wednesday, Friday and SUnday, most veg/greens from the garden, everyone only had to cook for everyone else about once every 6-8 weeks.
The best thing we came up with was 'those who cook, do the dishes'. SO again, the one person was only responsible (4 days a week anyhow) for cooking and clean up once every 6-8 weeks. Worked a charm.

The very best salad ever (we had number of ingredient challenges) was mine. 27 items, all minced so it was a weighty thing in and of itself. Even the kids liked it pulling little borage flowers and mustard flowers, and bits of rose petals out like treasures. No 'bunch of leaves' with thick dressing. Ho-made dressing made out of greens, ho-grown garlic, shallots and olive and sesame seed oils.

Anyhow...Sunday thoughts. But it did 'learn me to cook'. The best was seasonal guests who didn't appear often enough who would call out of the blue 'can I cook next FRiday?'. Those were the people who did unique things. The ling cod fisherman, who collected ling cod cheeks (normally tossed with the head) and non-license fish and flash frozen them at sea and he would do a big fry up of cheeks and make dozens of types of sushi along with oyesters, clams, perriwinkles, and crab he caught just for this particular dinner. To see a big burly, ex-Newfe Fishing boat Captain smoking, cooking, whistling, drinking white wine making this dinner that would cost $900-$1200.00 out having fun with children scampering at foot and the proud look on his face is a memory never to be forgotten.

Only stopped cooking after my last divorce, and ate out of cans...as you all well know! Now that I have moved...time to get the kitchen into ergonomic fluidity to start creating odd things again. Or should I say now that i HAVE a kitchen...lol...the bunky one was like being on a cheap sailboat.

It was supposed to be my night to cook, but my son's friend decided to make a prime rib roast. It was very good!

https://imgur.com/Eeg3bPX

Since it was last minute, I grabbed 2 boxes of Betty Crocker potatoes to make with it. The friend really doesn't do sides.tounge

https://imgur.com/SHcRHcH

I also made a Reese cookies dessert. It's peanut butter cookies with fudge filling. It wasn't bad for a box mix.

We toyed with the idea of taking the plastic X-mas tree out of the window (it's a prominent buiding) but both find comfort in the LED lights so screw that...year round X-mas tree! Now, to get the kitchen in order. It is rather odd to figure out a half grill, half burner stovetop. The oven is at waist height which is a bonus really. Only now am I regretting donating my deepfryer to the Legion...the last reaming gadget to get really. Not that I used it much. But I have been toying with chicken Kiev's as of late. The store bought ones just aren't as good and don't seemingly use real butter.

mmmmm, Lance, chicken kiev is a favorite. If you find a good recipe, please share! I might just have to make it for a Sunday dinner. We should have fresh chives in a few more weeks now that spring is almost here. It's snowing again today but supposed to be 65f by Wednesday.

I think I would try it in the air fryer..and maybe think about investing in that instead of a deep fryer? I have a lid that just fits on the Instant Pot (my favorite kitchen tool). The only thing is you can't do 'batter' items that well..drop donuts or even homemade onion rings with batter probably wouldn't work in an air fryer.

Thank you for sharing that history. It's awesome to learn where people are coming from.

I think the air fryer idea is a much better bet...way less messy...MY history was spelled out over years on the OG thread since I use here to practice writing things and everyone here is an appreciative audience. Wharf Rat has been encouraging. But since they made all my writing go 'poof' with HLF's thread I have been adverse into writing long things out on threads i don't mod. Next up....aside from this

It actually has a long sad history, and is believed to be one of the more detrimental things we have done to the Native Americans. The bread arose from figuring out what to do with government rations and since the introduction of processed white flour and (rancid) vegetable oils, many metabolic diseases have skyrocketed including diabetes.

It all just goes around. After dinner, we gassed up & bought sandwich stuff for tomorrow. We're taking Baby & our daughter to Talbot Island in FL for the afternoon after my dr appt.

One time we went, they were so many people, they closed the parks. So on the way home, we pulled over in a parking lot to eat in the back of the truck. There were a bunch of little shops so we walked around.

It was connected to the resort & we discovered a lovely path and a pond full of turtles. Baby named it Turtle Island. chuckle So now, we always stop there, too.

I got fried scallops for dinner.

Mr got a platter that had fish, scallops, oysters, & clams.

That looks delicious!

We just got home from our trip to Boneyard Beach in FL. We had lemon pepper chicken sandwiches & chips for lunch in the park.

We even saw a bald eagle! I took a pic, but he was so high up came out blurry.

If we're hungry later, we've got leftover calzones in the fridge.

That sounds like the perfect picnic Para! oof, that's a lot of alliteration.

and Simple, that looks so yummy..isn't it funny how different places have similar things? so many stuffed breads

I just finished veggie fried rice..we had leftover rice in the fridge and tons of eggs from the chickens so I chopped up a bunch of veggies from the 'rotter' (nickname for the crisper drawer), scrambled a few eggs, then fried it all together and drizzled with sesame oil and soy sauce.

and of course sriracha

It's been a very long week already.

But I saw my chives are up!

Right?? I didn't even know we had them here. I always pictured them being in Montana.

After looking it up, I saw there are some that nest in Jacksonville. Very cool!

Re: Food with Attitude!

Your menu always sounds so good and healthy! Can I move in for a few months? I'd be in my best shape lol. :)

Hope you're able to relax a little before the morning comes.
