Mix cooked spinach, feta, bacon, and a couple eggs. Put a couple tablespoons of mix on each flattened breast. Roll em up. Put them in a baking dish. Mix 1 cup ranch with 1 cup shredded sharp cheddar. Spread on top. Bake. Enjoy. |

In the 90's and onward the "magical" boneless, skinless, trimmed breast was the " Holy Grail" of the "low fat diet" craze..paired with BS like pasta, lettuce, white rice. Today...what we "actually want" is a bone in breast, thighs, quarters WITH skin. This is a unicorn! Nearly impossible to find most of the time. Seriously, even "nuggets" strips are all "white meat" whihch.really makes me wonder what it actually is. I am not a chef or even a decent cook but I prefer something as close to "natural" and unprocessed as possible. I think the giant chinese factory meat processing off shore ships didn't get new orders for "real meat" yet so they are still on auto pilot making nuggets and chicken breast....am not sure what part of the chicken they are gluing together to make it tho. |
