First you make it powerful enough to make your eyes water! Garlic salt, garlic powder, raw garlic cloves and chopped garlic from a jar, sweet basil, thyme...pepperoni, sausage, sweet red peppers, a small squirt of ketchup and a level teaspoon of sugar (the sugar isn't enough to make it sweet but it brings out the flavor of the herbs). Simmer slow for hours. Then...(here's the key)...YOU DON'T DULL THE FLAVOR!!! Cheese will dull the flavor of all you worked for, especially cottage cheese...the only cheese you should put in is parmasian cheese! Pasta also dulls the flavor...but it's a pasta dish so what can ya do? Well, I'll tell ya :D You put the pasta into the sauce dry...and slowly simmer covered for an additional hour and 15 minutes. The pasta absorbs the sauce...not water! And since it absorbs the liquids in the sauce...the sauce thickens beautifully!  EDIT: Sauce also works for pizza or lasagna.
