The kidneys, liver and brain are as good as food gets in my opinion. I had rabbit for lunch today. If you eat nothing but rabbit for several days in a row, yes rabbit starvation is a thing. So eat other food too and you will be OK. Probably the easiest animal to start farming. Ive done goats and chickens as well but rabbits grow to full size fast and eat mostly grass and hay. throw in a small handful of high quality organic pellets. Very cheap an easy compared to other animals. and the babies are great pets. My daughters love them but we have gone through so many they dont get specifically attached as there are always more baby bunnies just around the corner

Build a feeder that allows you to also feed hay. Use metal cages due to the fact they must chew, and thus wood cages become chew toys for them. And, they can and will eat their way out of wood cages, ask me how I know!!

When butchering set up everything BEFORE bringing them into the area for the butchering. Remember slow, careful, quiet as possible. The method we used for years was to have two very sharp knives, one large and one small . Bucket for the heads and guts, feet, another for the hides, and a big super clean white bucket W/lid for the processed meat. Keep a frozen water bottle in the bucket, slight amount of salt added to the water in the bucket to draw out any blood, keep lid on the meat.

Have a place to hang the critter, after removing the head to hang and drain the blood. My second son could do six in a matter of ten minutes cause it was all set up and ready to go before hand.

Process the meat right away! Take care of the hides right away, after the meat. OR find someone who wants the hides for craft projects.
