I haven't made homemade mayonnaise in quite a few months. I think it's time to again. Usually once I start, I get on a kick and make it for a few months. It is super easy. I don't know why more people don't do it. It's even easier if you have one of those handled immersion blenders.
My homemade mayo recipe. I got this from my mom. Grow up for quite a few years, my mom always made homemade mayo.
2 eggs
1 half teaspoon of dry mustard. Use that hot English Coleman's brand mustard for a kick. If anyone doesn't know about that dry English mustard mix in the yellow tin, then you are missing out. It is so good to dip all kinds of things in that stuff. Even chicken nuggets.
Salt and a few cracks of fresh pepper
2 tablespoons fresh lemon juice
Juat a splash of white wine
1 and a half cups canola oil
Try this as well.
Anchovy butter... Awesome on steamed or grilled vegetables, especially asparagus.
3 or 4 anchovy fillets. Dice them up quite a bit.
Whole stick unsalted butter. Salted butter is fine too. But it can get pretty salty.
1 teaspoon fresh lemon juice.
Dice up the anchovies and then just mix everything together super good. stick it in the fridge a couple hours before using. It's good for like a week.
